We currently recommend new players play 1.20 - it's now stable and the improvements from heracles and other 1.20-only mods and updates are noticeable.

If you're unsure which edition to pick, pick Tinkerer's Quilt - it's the most polished, complete experience. Don't be afraid to switch if the minimalism bores you, though.
